Trail Mix Cookies

1 cup Sunflower seed butter
1 cup coconut flakes
½ cup dark chocolate chips
½ cup packed dark brown sugar
½ cup dried cranberries
½ cup chopped dates
¼ cup sunflower seeds
¼ cup maple syrup
1 large egg
½ t vanilla -  ½ t baking soda  -  ¼ t salt

Preheat oven to   350, whisk egg in small bowl and then place all ingredients in a large bowl and mix until well incorporated.  Drop by teaspoon onto parchment lined cookie sheet and bake for 12-14 minutes.  Cookies should be set but still soft.  Let cookies cool on cookie sheet.
*could probably use almond or peanut butter
**I used ¼ cup dried cherries
