There's a chill in the air which makes it a perfect night to bake. And it makes me a little happy to bake up something tasty and warm. Especially when it's got organic ingrediants and no refined sugar or flour.
Quick and easy, too.
- 3 bananas (about 1 ½ cups) mashed
- 3 eggs
- 1 tablespoon vanilla extract
- 1 tablespoon honey
- ¼ cup Spectrum vegan shortening
- 2 cups blanched almond flour
- ½ teaspoon celtic sea salt
- 1 teaspoon baking soda
- Place bananas, eggs, vanilla, honey and shortening in a
food processor
- Pulse ingredients together
- Pulse in almond flour, salt and baking soda
- Scoop batter into a greased 7.5" x 3.5" Magic
Line Loaf Pan (or 12 cup muffin pan)
- Bake at 350° for 30 minutes
- Remove from oven and allow to cool
