Paleo Pumpkin Breakfast Cookies

Sunny Chapple Smoothie
Looking for a tasty alternative for breakfast? Why not try this "Sunny Chapple" smoothie (Orange, Cherry, Apple)
Okay - here's what I put in this all organic smoothie...
- 3/4 cup Vanilla Yogurt
- 1 1/2 cups rice milk
- 1 orange (peeled & seeded)
- 1 bag frozen cherries
- 1 apple (peeled & seeded)
- Whey Vanilla protein
I always say - use what you got!
Blend together until smooth and delicious.
Drink up!

Kay Warren's "BAKED OATMEAL BARS"
These little yummy jewels are like "Oatmeal-on-the-go" bars. Just leave the bowl at home.
Some of you attended the Daniel Plan Rally in October. It was great to finally see Dr. Oz sitting up on stage with the other Doctors Amen and Hyman. Pastor Rick was his usual loving and laughable self. Then came his lovely wife, Kay Warren with one of Pastor Rick's favorite treats.

From Kay Warren's Kitchen
2 C. GF regular or old-fashioned rolled oats
1 ½ t baking powder
½ t salt
2 ½ t cinnamon
4 t. from Stevia container (this is a TINY spoon, so 4 of the TINY spoons)
1 C lite coconut milk or non-fat milk substitute of choice
1 egg replacer ( I use a dry mix from Henry’s; this is 1 ½ t of dry mix with 2T water)
½ c unsweetened applesauce
1 ¼ t vanilla
1 C chocolate chips (I used the mini-chips from Henry’s; soy free, dairy free, etc)
Preheat oven to 350; spray coconut oil on 8x8 pan.
Combine dry ingredients in a food processor and pulse to mix well.
Add liquids and mix well. Gently incorporate chocolate chips into mixture.
Pour batter into prepared pan and bake 30 minutes. Remove from oven and cool slightly before cutting into squares. Makes 8 large squares or 16 smaller squares.
Can substitute raisins, cranberries, dried cherries, etc, or reduce amount of milk and add Peanut butter.
NOTE: The way I make it is Gluten free, dairy free, sugar free (except chocolate chips), egg free and soy free! But definitely not taste free!
When I (Melanie) made mine to bring to Friday Night Walk & Worship I used an Omega Enriched Organic Egg. And, as the envelope pusher that I am, I added Walnuts for an extra crunch.
Teachable Lesson - That's what's great about recipes, we can mold them to our own needs.

Pumpkin Pie in a Glass
Ingredients:
- 1 cup pumpkin puree
- 1 very ripe medium-sized banana (preferably frozen)
- 1 1/4 cup vanilla yogurt (preferably fat-free)
- 1 tbsp honey
- 1 tsp pumpkin pie spice
- Dash of Cinnamon
- 1/2 tsp vanilla extract
- 5-6 ice cubes (crushed)
Preparation:
Place all ingredients in a blender and puree until smooth, making sure the ice is completely crushed.
Feel free to sweeten your smoothie to your preference. You may also add powdered protein, if you're so inclined.

Healthy Pancakes
My recipe is for healthy pancakes.
Basic Recipe
1 C Cottage cheese
1 C Rolled oats (oatmeal)
1 C Egg whites
Blend ingredients in a blender or food processor and cook on lightly oiled pan. You can thin with milk or water if necessary.
It’s super simple and can be adjusted by adding spices, sweetener, fruit, nuts etc.
I like to add vanilla, cinnamon & blue agave sweetener.

Banana Bread (Gluten Free)
There's a chill in the air which makes it a perfect night to bake. And it makes me a little happy to bake up something tasty and warm. Especially when it's got organic ingrediants and no refined sugar or flour.
Quick and easy, too.
- 3 bananas (about 1 ½ cups) mashed
- 3 eggs
- 1 tablespoon vanilla extract
- 1 tablespoon honey
- ¼ cup Spectrum vegan shortening
- 2 cups blanched almond flour
- ½ teaspoon celtic sea salt
- 1 teaspoon baking soda
- Place bananas, eggs, vanilla, honey and shortening in a
food processor
- Pulse ingredients together
- Pulse in almond flour, salt and baking soda
- Scoop batter into a greased 7.5" x 3.5" Magic
Line Loaf Pan (or 12 cup muffin pan)
- Bake at 350° for 30 minutes
- Remove from oven and allow to cool

Goji Power Bars

These are quite delish! Not too time consuming to make. Fast bake and take.
I'll be bringing these to sample this Friday night at Walk & Worship.
1 cup blanched almond flour
1 tablespoon coconut flour
2 tablespoons golden flaxseed meal
1/4 teaspoon celtic sea salt
1/2 teaspoon baking soda
2 tablespoons coconut palm sugar
1/4 teaspoon Stevia
2 eggs
1/2 cup goji berries, soaked in 1/4 cup boiling water to plump
1/2 cup dark chocolate chips
1. In large bowl, combine almond flour, coconut flour, flax meal, salt and baking soda.
2. Blend in coconut sugar, stevia and eggs with a hand blender.
3. Mix in gojis and chocolate chips with large spoon.
4. Spread mixture into an 8x8 baking dish (about an inch thick).
5. Bake at 350 degrees for 15 minutes.
Cut into squares and serve.
Makes 16 bars

Almond Butter, Banana and Chocolate Chip Muffins
I made these little mini's as I had some bananas that had decided to ripen quicker than we could eat them.
So instead of tossing them out, I put them to work for me in these little mini's.
Now you don't have to make mini's but I wanted to stretch them as far as I could...and these are truly delish!
Gluten Free Recipe
Three sweet favorites come together to make these delicious muffins. Buttermilk adds tenderness but you can use rice milk if you are sensitive to dairy.
Ingredients
3 Bananas
2 Eggs
1/2 cup Sucranat
1/2 cup creamy Almond or Peanut Butter
1-¾ cups superfine White Rice Flour
2 tsp Baking Powder
1 tsp Baking Soda
1/3 cup Grapeseed oil
1/2 Buttermilk*
1/2 cup dark chocolate chips
*1/2 cup rice milk with one tsp lemon juice (Can be substituted for buttermilk)
Directions
Preheat oven to 350 degrees. Mix four ingredients in food processor. Blend for one minute.
Combine dry ingredients in a mixing bowl. When thoroughly mixed, add to food processor.
Add Oil, Buttermilk*. Blend well.
Add chocolate chips, press "pulse" once or twice.
Ladle the batter into muffin tins lined with paper, filling each paper to the top.
Bake for about 12 minutes, or until muffins are firm to the touch. Cool and serve. Top muffins with a drizzle of chocolate, if desired.
