Kay Warren's "BAKED OATMEAL BARS"

These little yummy jewels are like "Oatmeal-on-the-go" bars.  Just leave the bowl at home.

Some of you attended the Daniel Plan Rally in October.  It was great to finally see Dr. Oz sitting up on stage with the other Doctors Amen and Hyman.  Pastor Rick was his usual loving and laughable self.  Then came his lovely wife, Kay Warren with one of Pastor Rick's favorite treats.

From Kay Warren's Kitchen

2 C. GF regular or old-fashioned rolled oats
1 ½ t baking powder
½ t salt
2 ½ t cinnamon
4 t. from Stevia container (this is a TINY spoon, so 4 of the TINY spoons)
1 C lite coconut milk or non-fat milk substitute of choice
1 egg replacer ( I use a dry mix from Henry’s; this is 1 ½ t of dry mix with 2T water)
½ c unsweetened applesauce
1 ¼ t vanilla
1 C chocolate chips (I used the mini-chips from Henry’s; soy free, dairy free, etc)

Preheat oven to 350; spray coconut oil on 8x8 pan.

Combine dry ingredients in a food processor and pulse to mix well. 

Add liquids and mix well. Gently incorporate chocolate chips into mixture.

Pour batter into prepared pan and bake 30 minutes. Remove from oven and cool slightly before cutting into squares. Makes 8 large squares or 16 smaller squares.

Can substitute raisins, cranberries, dried cherries, etc, or reduce amount of milk and add Peanut butter.
NOTE: The way I make it is Gluten free, dairy free, sugar free (except chocolate chips), egg free and soy free! But definitely not taste free!

When I (Melanie) made mine to bring to Friday Night Walk & Worship I used an Omega Enriched Organic Egg.  And, as the envelope pusher that I am, I added Walnuts for an extra crunch.

Teachable Lesson - That's what's great about recipes, we can mold them to our own needs.
