Goji Power Bars
These are quite delish! Not too time consuming to make. Fast bake and take.
I'll be bringing these to sample this Friday night at Walk & Worship.
1 cup blanched almond flour
1 tablespoon coconut flour
2 tablespoons golden flaxseed meal
1/4 teaspoon celtic sea salt
1/2 teaspoon baking soda
2 tablespoons coconut palm sugar
1/4 teaspoon Stevia
2 eggs
1/2 cup goji berries, soaked in 1/4 cup boiling water to plump
1/2 cup dark chocolate chips
1. In large bowl, combine almond flour, coconut flour, flax meal, salt and baking soda.
2. Blend in coconut sugar, stevia and eggs with a hand blender.
3. Mix in gojis and chocolate chips with large spoon.
4. Spread mixture into an 8x8 baking dish (about an inch thick).
5. Bake at 350 degrees for 15 minutes.
Cut into squares and serve.
Makes 16 bars
