Fruit Pudding

Another delish dish from Sharon.

  • 8 dried apricots or ½ cup dried apples
  • 4 prunes or ¼ cup dried cranberries
  • 1 teaspoon cinnamon
  • ¼ teaspoon cloves
  • ½ teaspoon ginger
  • 1 cup water
  • 3 eggs
  • 1 Tablespoon vanilla
  • ¼ cup chopped pecans
Place dried fruit, spices, salt and water in a small sauce pan and bring to a low boil, simmer covered for 30 minutes, until fruit is reconstituted. Let mixture cool for about 10 minutes, then pour into a blender (I use a bullet) with the eggs and vanilla, puree until smooth. Spray a small baking dish or 3-4 6oz ramekins and pour mixture in, top with pecans.  Place on baking sheet and bake at 350 for 30 minutes.  Cool and serve.  Yummy warm as well.  Be creative and use any combination of dried (whole?) fruits and various spices.
